JO'S RASPBERRY, COCONUT & WHITE CHOCOLATE FLAPJACKS

I baked these delicious treats with the kids at the weekend for a birthday and they’re one of our favourite things to make. We love oats, so filling & nutritious and won’t break the bank. They're also a great lunchbox snack and are gluten free if you use gluten free oats.

The recipe was inspired by @littlemuffinblog but we put a slightly different twist on it. These take 10 mins and can be kept in the fridge for a week, if they last!

RECIPE

  • 320g Oats (Gluten Free)
  • 140g Irish Butter
  • 5 tablespoons Honey
  • 75g desiccated coconut
  • 2 tea spoons vanilla extract
  • 100g frozen raspberries or cherries
  • 30g of white chocolate for drizzle

METHOD

Add dry ingredients to your blender (I know, I'm lazy!). Melt butter for 20-30 seconds in microwave. Add to dry mix, blend until mix comes together. Spread into parchment lined tin so flapjacks are 1-1 1/2 inches thick. Bake at 160 for 20-25 mins. Allow to cool and drizzle with melted white chocolate. There's not much white chocolate here so these are a nice, healthier option treat / snack.
